Soak peas overnight. Drain and rinse before using.
Bring pot of water to boil; simmer peas 15 minutes.
Drain water from pot. Add fresh water, olive oil, oregano, and salt and pepper; bring to boil again. Simmer on medium-low heat 30 minutes.
Chop Swiss chard leaves into ribbons; add to pot after 30 minutes. Simmer another 5 minutes.
Sprinkle with lemon juice. Serve warm or cold.
Roasted Lemon Chicken
Potato wedges can be added to the pan, but if you do add them, make sure you add enough water to cover them. Add a splash of lemon juice and olive oil — yum!
